The one meat I cook regularly is chicken. I boil fry, steam and most importantly roast chicken weekly. I had made great mistakes when trying to perfect make perfect chicken.
I have a recipe for the different occasion as far as a chicken is available. This recipe is foolproof and easy to follow. If you need tasty, juicy meat full of flavour, this is all you need.
How TO Get A Perfect Roast.
To get a deliciously golden spicy chicken, you need the following ingredients
1 teaspoon Smoked Paprika
1 teaspoon Flaked crushed chilli
1 Small Red onions -chopped
1/2 Teaspoon of Tumeric
1/4 of a teaspoon ground ginger
1/2 Teaspoon Garlic powder
1/2 of a lemon juice
Mustard seeds
1/2 teaspoon of mixed herbs
2 tablespoon of oil
A Pinch of Seasalt
Medium size free-range whole chicken
Preheat your oven to 190C/fan 170C/gas 5. Make sure the tray you intend to cook the chicken is in the middle of the oven without anything above it.
Mix all the dry ingredients in a small bowl. Add the oil and the juice of the lemon.
Season the cavity of the chicken with the mixture making sure it is well covered. Scattered the onions around the chicken before putting it in the oven.
It is best to marinate the chicken for a minimum of 10 minutes. It could also be kept in the fridge overnight.
Place the chicken in the oven and cover with aluminium foil for a perfect even roast.
Leave the chicken undisturbed for about 60 to 80 minutes. This will give you a nice succulent roast.
To check if your meat is done, pierce the thigh with a skewer, clear juices show that you have a perfect roasted chicken.
Carefully remove the tray with the chicken from the oven.
Using a pair of tongs, lift the chicken to a dish or board to rest for 15-20 mins. As you lift the dish, drain off any juices from the chicken.
Serve with anything you fancy. Enjoy!
