This recipe is my lazy day meal. It requires little effort. In the recipe, I used mackerel, cod and haddock. Everyone in my house like fish, but, they like different types.
You can decide to poach your vegetables instead. I used frozen fish Fillets from the shop and that made life a bit easier.
I love using fish due to its health benefits. Omega -3 is under-utilised. Omega-3 is what can be referred to as “brain oil”. Omega-3 is ranked among the most important nutrients of our time and where else to get it in abundance than in fish. Omega-3 regulates and normalises cholesterol, it enhances learning and promotes good heart health.
Fish is a good source of protein. Including fish in your diet not only help you stay healthy, it can also help with weight loss.
Poach fish is easy to cook and the preparation time is less than 5 minutes. Here’s how I made mine
You will need the following:
Fish (any type you fancy)
Onions
Salt
Tomatoes (optional)
Black peppers
Chilli (optional)
Mixed herbs ( a must for me)
Foil
Pre-heat the oven to 180 C F. Chopped onions and chili pepper (if using). Roll out your foil, enough to wrap up the fish you are using. I doubled mine up to prevent leakage. Place your fish in the centre of the foil, season with black pepper, chopped onions (optional), chili and salt. Wrap up lightly and place the wrap in a tray or dish suitable for oven use.
Place your oven-tray or dish in the the centre of the oven and cook for up to 20 minutes or until your fish is cooked.
Put your oven gloves on and take out of the oven. Place your wrap on a plate and open to let the steam out. You can now take out the chili if you cannot stand the heat.
Enjoy your fish. I had mine with steam potatoes and mixed vegetables. It is entirely up to you what you want to eat this delicious fish with.
