I have a special relationship with plantain,not because it is a fruit (Yes, it is a fruit),but,it has been an item of food that demands little but offers so much.
Plantains are a great source of potassium. Plantains are ranked among one of the most potassium-rich foods in the world.
Plantain maintains a healthy digestive system as well as boost the immune system. It is enriched with Vitamins C and has a reduced number of free radicals, unlike other foods.
Plantain contains magnesium and Vitamins B6 which aids healthy brain functions.
Plantain is also high-fibre food which helps you satisfied for longer. Plantains are the food to keep if you want to sustain a healthy weight gain.
Plantains are low in fat with a solid source of carbohydrates. They do not only taste good, they have loads of health benefits.
In this recipe, I experimented with roasted/grilled plantain and eggs. This recipe gives you so much in less time. It is healthy and ideal to keep on your weight loss journey.

More than half the protein of an egg is found in the egg white along with vitamin B2 and lower amounts of fat and cholesterol than the yolk. The whites are rich sources of selenium, vitamin D, B6, B12 and minerals such as zinc, iron and copper”.
I used eggs not only for what they give but because they compliment grilled plantain better.
Here’s what you will need for this recipe.
Ingredients
2 Plantains
2 medium size eggs
Onions (optional)
1 tablespoon of sunflower oil
Pre-heat your oven to 180C.
Cut your plantains into chunks and arrange on an oven tray. You can grill or roast your plantain.
I made mine in a Panini grill. You can either use Panini Grill, oven or good old grill.
Place your tray in the oven and cook for about 15 minutes. Take out when cooked (when it is slightly dark in appearance ) and leave to cool.
How to make Sunnyside fried eggs.
Place your non-stick frying pan on a medium heat. Allow the pan to warm up before adding the oil. Break your egg in whole onto the middle of the pan.
Let your egg cook for about 45 seconds on each side before turning. Cook until you are satisfied with your eggs. I love my egg fully done. If you like your egg runny in the middle you might need less time to cook.
Dish up your storm and enjoy. I had mine with a bit of ketchup and raw onion rings with apple as afters.

Looks great I've never tried roast plantain only fried so In Sha Allah I will try this!
