Potato has been tagged wrongly due to its starchy composition and its nutritional benefits have been overlooked. However, potato is packed with vitamins, minerals and phytochemicals that ward off disease and aid healthy lifestyles.

Potato supplies our body with vitamin B6, a good source of potassium, copper, vitamin C, manganese, phosphorus, niacin, dietary fibre, and pantothenic acid. It is known to lower blood pressure.

It helps regulate fluids and mineral balance in and out of cells and in doing so helps maintain normal blood pressure. Potassium is also vital for transmitting nerve impulses or signals, and in helping muscles contract”.
My recipe combines the use of potatoes with skin on , herbs, peppers and onions. It is very easy to make, it is packed with beneficial nutrients and can be included as part of a healthy diet.
Here is what you need to make this delicious meal.
Ingredients:
4 (medium) Potatoes
2 large peppers
1 medium size onions
Mixed herbs ( dried thyme, rosemary, basil, marjoram and oregano)
2 tablespoons of Olive oil.
Dice or chop your potatoes into bite sizes. Roughly chop your onions and pepper.
On a medium heat, add oil to a sauce pan and allow to heat up. Sauté the onions in the olive oil. Add the chopped potatoes and mixed herbs. Stir to get the herbs on the potatoes and onions. Keep cooking for about 5 minutes, stirring from time to time. Add chopped pepper at this point and stir. Cook for another 3 minutes and allow steam to build up.
Transfer the mixture into an oven dish. Season (with salt and pepper if required). Sprinkle with 3 tablespoons of water and cook in the oven for another 20 minutes. Cook until crispy. Enjoy.
This is a good breakfast. You can enjoy with chicken for a delicious family meal.
